Wine Appreciation: From Vineyard to Glass (FOOD 901)

This course is designed to give you an overview of winemaking, starting with the grapes in the vineyard through the winemaker’s finishing touches. Vineyard techniques, growing season, and “terroir” have distinct influences on how a wine will ultimately taste in your glass. Did you know that a winemaker has 30 potential choices/decisions to make before bottling? The class will be conducted in a fun and casual combination lecture and wine tasting format. Students will taste a variety of wines both nights that are representative examples of concepts taught in class.

You asked for it and we listened! Join Chef Nanci and staff in this highly requested three-part series focusing on cooking basics & fundamentals. Beginner, intermediate and advanced cooks will all learn some new and valuable techniques to make the cooking process more enjoyable, and the outcome (the food!) superb. In our first class, we will explore and learn the gateway into really great cooking - Stocks & Sauces. In part two of our series, we will focus on types of cooking as they apply to foods, braising, frying, sauting, roasting and grilling. Tamale Workshop (FOOD 912)

In many households, tamales are standard fare for the holidays. With the preparation being so labor and time intensive, tamales became holiday fare, made only for special occasions. This tradition has remained for thousands of years and now Chef Nanci wants to invite you to join her and learn the art of tamale making in this special hands-on workshop. Students will learn about the tamale making process, how to make the meat and fillings, how to prepare the masa dough and how to use dried cornhusks. Students are asked to bring an airtight container to class in which you will be able to transport your creations home to share with your family. Each student can expect to bring home approx. 6 tamales ready to steam.
